Healthy, Low-Cost Lamb Doner Kebabs

Recently at our Middlewich service, clients took part in a healthy cooking session with Coach Sean, where they made a low-cost, homemade lamb doner kebab – and it was a huge hit.

This recipe is simple, affordable, and packed with flavour. It’s also a great example of how cooking sessions can help build confidence, independence, and practical life skills, all while enjoying something delicious at the end.

Best of all? There’s no frying, no specialist equipment, and everything is cooked in the oven.


Viral Lamb Doner Kebabs

Oven Only – Baking Paper Method

Serves: 4
Prep time: 15 minutes
Cook time: 16–20 minutes


Ingredients

  • 750g lamb mince (20% fat minimum)
  • 1 medium onion, very finely grated
  • 3 garlic cloves, crushed
  • 1½ tsp fine salt
  • 1½ tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • ¾ tsp ground black pepper
  • ½ tsp chilli flakes (optional)
  • 2 tbsp olive oil
  • Wraps, flatbreads or pittas
  • Sauces and salad for dressing


Method

1. Remove the onion moisture (important!)

After grating the onion, squeeze it completely dry using your hands or a clean tea towel. This step is essential – excess liquid will stop the kebabs browning properly.


2. Mix hard to bind

Place all ingredients into a bowl.
Mix vigorously by hand for a full 5 minutes until the mince becomes sticky, cohesive, and slightly elastic.

👉 This replaces the need to chill the mixture, so don’t skip or rush this step.

 


3. Flatten between baking paper

  • Place the mince onto a sheet of baking paper
  • Cover with another sheet
  • Roll or press into a very thin, even layer (around 2–3mm thick)

Thinner than you might expect is perfect — it firms up quickly in the oven.


4. Slice immediately

  • Peel back the top sheet of baking paper
  • Using a sharp knife, slice into thin strips (around 8–10mm wide)
  • Carefully lift the strips and place them directly onto a lined baking tray

Don’t worry if they lose shape slightly — they tighten as they cook.


5. Oven cook

Preheat the oven to 220°C fan (or 240°C conventional).

  • Spread the kebab strips in a single layer
  • Place the tray in the top third of the oven
  • Cook for 10 minutes
  • Remove, turn and separate the strips
  • Return to the oven for 6–10 minutes until browned and lightly crisp

🔥 Optional: Finish with 2 minutes under the grill for extra colour.


Serving Ideas

These kebabs are great served with:

  • Flatbreads or wraps
  • Salad and yoghurt or garlic sauce
  • Homemade wedges or rice
